Well, so far my adventures in clean eating are going great! Of course, I'm really only on Day 2, seeing as Monday was a holiday. Who starts a diet on a holiday, after all? Not me!
Yesterday I started with a low-fat granola from Sprouts, almond milk, cranberries and a sprinkle of wheat germ for breakfast. Delicious! In fact, it tastes like cookie dough!
Lunch was fantastic. I made a couscous with zucchini, green tomatoes, nonfat feta cheese and lime. DE-licious! I also added some chicken breast for protein. I added a snack of Crunchmaster Whole Grain Crackers (they have sunflower seeds in them) and baba ghanouj.
For dinner I made a very simple homemade marinara out of canned whole tomatoes (organic, of course), basil, garlic and a splash of white wine. Once it cooked down, I stuck it in a blender for just a second and served it over whole wheat pasta. It was great!
Today, I had the same thing for breakfast and leftover spaghetti from last night. I also finished off that tasty baba ghanouj!! I haven't decided on dinner, but I'm thinking on chicken taquitos.
The one thing I can tell a great difference in already is how I feel! I've been walking each night at a brisk pace for at least 30 minutes. My plan is to gradually add running to where I can eventually run the entire time. I use an app on my phone called My Fitness Pal that details fat, calories, etc...What I am most impressed with on my new diet is the lack of sodium and cholesterol! Although, the calories are about the same as my typical lean cuisine cardboard diet that leaves me hungry...I've met my vitamin intake goal each day without having to take a multi-vitamin! This is the start of a whole new lifestyle for me and my family!
