Red Chile Chicken Tacos





 It's so true that necessity is the mother of invention. I had planned to make tacos for dinner tonight, but I was really not interested in the regular boxed taco kit. I decided to play around with some enchilada sauce, cilantro and other fun flavors...and this is what I came up with!

Ingredients:

Meat Mixture:

1 Tbsp olive oil
1/2 red onion, chopped
1 lb ground chicken breast
1 can red enchilada sauce
3 cloves garlic, chopped
1/2 packet of low sodium taco seasoning
1/2 cup cilantro, chopped

Toppings:

Cheddar Cheese
Black Bean, Corn and Tomato Salsa
Guacamole
Black Olives
Lettuce
Anything you like!


I really can't get over how simple this recipe is!  Start by sauteing your onions in the olive oil. Then add the chicken, and make sure to brown it until it's cooked all the way through. Once chicken is done, add the can of enchilada sauce. Any brand will do!


Then add the taco seasoning and just a little bit of water...maybe 1/2 cup to 1 cup. Turn the heat down and let it simmer. You'll get a really rich, deep red sauce. I let it cook down about 45 minutes. You certainly don't have to, but you get a really nice flavor if you let it cook down a bit.


Chop up your beautiful cilantro right before you serve it, and stir it in.



So simple...yet so good.

Serve it any way you like it! As you can see here, my husband put it on a taco and on top of some rice.
